30-Minute Healthy Mexican Inspired Turkey Chili
Last weekend we finally said goodbye to 80 degree weather and cooler temps were ushered in. We decided to go over to a friends house to watch some football and have dinner. My girlfriend decided to make a quick and healthy turkey chili and both Ben and I were blown away how delicious it was. It was so good we decided to make it the very next day!
We swapped out a few of the ingredients, added in a few others and decided to rinse all the veggies vs using the liquid in the cans. Maybe it’s a me thing, but I am not the biggest fan of the liquid in the can so I always rinse my veggies and beans. It’s a great way to get extra starch and salt off your veggies and beans so you can control seasoning and taste.
We seriously loved this chili and could not recommend our updated version more. It takes less than 30 minutes to make, you can add your own toppings and it’s so much fun to enjoy curled up under a blanket while watching a movie.
Here is what we did:
30-Minute Healthy Mexican Turkey Chili
Servings: 4-6
Ingredients:
1 lb lean ground turkey (99% fat free)
1 small onion, diced
1 green pepper, diced
1 can (15 oz) chickpeas, drained
1 can (15 oz) black beans, drained
1 can (15 oz) roasted corn, drained
1 can (15 oz) diced roasted tomatoes, undrained
1 can (4.5 oz) diced green chiles, mild, drained
4 cups chicken bone broth
2-3 tablespoons Adobo Chili sauce
1 can (8 oz) tomato sauce
1 Tbsp minced garlic
1 Tbsp salt
1 pouch taco seasoning
Toppings:
Greek yogurt
Mexican cheese
Avocado
Broken up Siete chips
Instructions:
In a dutch oven, brown ground turkey, onion and green pepper until cooked through
Add taco seasoning, garlic and salt, stir until all meat is coated
Add remaining ingredients and stir
Cover, and cook over medium heat, letting simmer for 15 minutes.
