Healthy-ish Slow Cooker Nashville Hot Chicken

Today I am sharing a new go-to meal in our household. I did a quick post about it on Instagram because it was a hit in my stories and people were asking for the recipe, so here we are!

You may remember, but a few weeks ago I shared how my husband and I were in a dinner rut and we wanted to try a few new recipes we had been bookmarking. We finally settled on a slow cooker not deep fried Nashville Hot Chicken recipe but as always, I went in and a made a few ingredient swaps based on what we had in the pantry and to make it slightly more healthy-ish.

Note: Even though I live an intuitive eating lifestyle, I do ingredient swaps because I know ingredients and foods my body likes and doesn’t like. Yes, there are times when I am okay taking the discomfort on, but when I am cooking at home I like to stay comfortable and eat in ways that make me feel good and not blah.

Even with our swaps this Nashville Hot Chicken was super delicious. It wasn’t dry at all and the spice level is absolutely something you have control over. For me what made the whole thing was the pickles. The crunchy, fresh pickle elevates the whole slider. It was so good that we not make it once a week.

Healthy-ish Slow Cooker Nashville Hot Chicken Sliders

Equipment:

Ingredients:

  • 3-4 chicken breasts

  • 2 Tbsp Garlic powder

  • 2 Tbsp Fresh garlic

  • 2 Tbsp Paprika powder

  • 2 Tbsp Cayenne powder

  • 2 Tbsp Chili powder

  • Pinch (ratio up to you) Red pepper flakes or hot sauce

  • Salt

  • Pepper

  • 1-2 Tbsp Coconut brown sugar

  • 16 oz. Chicken bone broth

  • 3 Tbsp Ghee

  • 1/2 Light beer (optional)

  • Jar of pickle chips

  • Ranch dressing

  • Rolls

Directions:

  • Put crock pot bag in crock pot (makes for easy clean-up).

  • Make spice mixture.

  • Place chicken in crock pot and season with spice mixture. Make sure both sides chicken is coated.

  • Pour in liquids.

  • Place a Tbsp of Ghee on each chicken breast.

  • Slow cook for 6-8 hours on low. Flip the chicken once after 4 hours.

  • Pull chicken apart, toast rolls and make sliders. Note: Looking for a GF option, use lettuce cups or make a salad.
