Spicy sausage and kale sweet potato soup.

The other night I was in the mood for soup, but wanted to make something easy, delicious and from scratch. I also wanted to make something hearty, healthy and used what I already had on hand. So I went down the Pinterest rabbit hole trying to find something that looked delicious, inspiring and could be easily adjusted based on the ingredients I had and I came across this soup and thought…perfect! It looked delicious, easy and I knew I could make my adjustments and still capture the flavor of the original recipe.

And let me tell you, this soup was bomb! It was sweet, spicy and so delicious. I made a lot of ingredient changes, but seriously, this was one of the best soups I have ever made and it only took about 30-minutes from start to finish.

Here is what I did!

Ingredients:

  • Dutch Oven (similar)

  • 1 packages spicy chicken sausage, sliced into thin dollars

  • 1 package chopped frozen spinach

  • 1 large onion, rough chopped

  • Spoonful of fresh, minced garlic

  • 4 cups of beef bone broth

  • 4 cups water

  • 2 sweet potatoes, peeled and cut into small cubes

  • 1 tbsp paprika

  • 1 tbsp chilli powder

  • 1 tsp cayenne

  • Salt and pepper to taste

  • 2 tbsp Avocado Oil

Directions:

  • Cut up sausage, onion and sweet potatoes to get ready for use. Brown the sausage for added flavor and texture.

  • Add avocado oil to dutch oven over medium heat. Add in chopped onion and sweat until translucent.

  • Add in garlic and cook for a minute.

  • Add in bone broth, water and sweet potatoes and cook until sweet potatoes are tender.

  • Once tender, blend slowly with the immersion blender.

  • Optional: If you don’t want a grainy soup, strain to make smoother.

  • Add spices, kale and sausage, bring to a boil and then put lid on and simmer until ready to eat.

  • Soup make about 4-6 servings. A great meal prep soup!

Seriously, this soup was so good and super easy to make. It has the husband stamp of approval!
