An Easy, Healthy and Immune Boosting Homemade Wonton Soup

I believe a big part of intuitive living is about learning to truly listen to and understand your body, what she is telling you she needs and when. Your body is constantly speaking to you each and every day and works hard to communicate with you so your mind and body can work together synergistically in order to help you create optimal health in your life.

Last week I had my yearly physical and my bloodwork came back signaling high inflammation in my body. I wasn’t surprised because I have been dealing with high levels of stress and anxiety recently, but I also took a pause of concern because I know inflammation in your body could lead to additional serious health concerns.

To help combat the inflammation, I turned to my favorite functional medicine Dr (Dr. Will Cole) and started scouring his blog to learn about anti-inflammatory foods. I wanted to start with food since even small changes in what I am eating (or not eating) can make a big impact and it’s also something I can immediately adjust. (tip: it is easier to ADD in healthier foods vs. telling yourself you can’t have certain foods. Focus on ADDING, nit subtracting.) I do lean towards a more balanced diet because my body feels at it’s best when i’m eating more whole foods, but I also know I could add a lot more variety when it comes to the whole foods I am eating.

Over the weekend we were watching The Kitchen and they made this super easy Wonton Soup and I decided I wanted to give it a try. We changed up a few of the ingredients to give it a bigger immune boosting and anti-inflammatory punch and I cannot tell you how good this soup was!

Some of the immune boosting and anti-inflammatory ingredients were:

  • Bok Choy: Aids in bone, eye, and heart health, is an anti-inflammatory AND helps in cancer prevention.

  • Bone Broth: Helps keep your immune system healthy and is packed with so many vitamins and minerals i could go on and on about all bone broths benefits. Truly magical.

  • Ginger: Is an anti-inflammatory and help keep your joints healthy.

  • Garlic: Helps reduce blood pressure, cholesterol and aids in heart disease prevention, plus more.

This soup was super easy to pull together, made a TON, is full of flavor and filled with so many health benefits: vitamins, minerals, anti-Inflammatory and immune building ingredients. Enjoy!

Healthy and Immune Boosting Homemade Wonton Soup

Here is what we did:

  • 2 tbsp olive oil

  • 2 4 cloves fresh garlic, minced

  • 2 tbsp Fresh ginger, minced

  • 3 green onions (white parts for cooing and green for varnish)

  • Mushrooms, chopped

  • 4 heads baby bok choy

  • 5 cups bone broth (I used beef but your choice)

  • 3-4 Tbsp low sodium soy sauce (or coconut aminos)

  • Frozen wontons (or do a protein like chicken or shaved beef to keep it paleo/Whole30)

Directions:

  • Heat up oil, add ginger, garlic and onions and cook for one min.

  • Add mushrooms and cook till soft. Add in bone broth and bring to a boil.

  • Add in bok choy and soften.

  • Add in soy sauce and wontons and cook till wontons rise to top.

  • Ladle into a bowl, garnish and serve!
