Healthy Recipes On My "Must Try" List
One of my goals in 2021 is to better my cooking skills and try out new recipes. I can be such a creature of habit always eating the same things over and over, but I’m really determined to challenge myself this year with trying new ingredients and recipes.
So I rounded up some recipes that have caught my eye and I will be trying in the coming weeks. I know being in the kitchen can be super nourishing for me, which makes me excited to get back into the kitchen, get creative and eat some super yummy food.

Cinnamon Rolls: My husband’s birthday is coming up so I was going to try my hand at making these for breakfast. I love that these are a healthier option but still look just as gooey and delicious.
Vegan Tortilla Soup: I love tortilla soup, especially an easy tortilla soup that is packed full of flavor but super easy to make. This version looks easy with not a lot of ingredients. I will most likely add shredded chicken in my version and we will use these cassava flour tortillas too to keep it grain free.
Vegan Roasted Red Pepper Pasta: A person I follow on IG makes this pasta A LOT and it always looks so yummy and I am dying to give it a try.
Buffalo Chicken Wraps: This recipes uses the new IG/Tik Tok trend of making a wrap into quadrants and folding it. Plus I love anything with hot sauce and looks easy to make.
Smoked Potato and Kale Soup: I love soup and this one looked like it would be super comforting on a cold winter day.
One Pan Greek Chicken and Rice: This is a little out of my comfort zone, but looks like a fancy dinner. I’m all about easy recipes that make you think I was in the kitchen all day. Very a la Ina Garten.
Kale Salad with Creamy Tahini Dressing: I will add chicken for more protein, but sometimes I just want a fresh salad and this kale salad reminded me of a kale salad I love at one of my favorite local restaurants.
Oatmeal Cream Pies: I love oatmeal cream pies. Plain and simple…..love them! This healthier version caught my eye and I am absolutely going to make them and enjoy every bite!
Peanut Energy Balls: I love to have healthy snacks on hand and find making themself can be a huge money savor from all the healthy boutique snack out there. energy balls are a great healthy snack to have on hand when you need something to keep you going, need some nourishment, but don’t want to grab another cup of coffee.
