Slow Cooker Healthy Pumpkin Turkey Chili
It’s fall, the days are getting shorter, colder and all I want to do is feel warm and cozy. My husband and I decided it was time to break out an ole’ staple and make chili. We both like different types of chilis. He like white chicken chili and I like red and spicy chili. He likes a soupier chili and I like a heartier chili. The one thing we both agree on though, we both don’t like beans.
So we decided to get creative based on what we had in the pantry and refrigerator and threw an easy, healthy and super delicious Pumpkin Turkey Chili together. This chili was super easy to make and the slow cooker did most of the work. We did do a little prep work, but not much. I’m truly stunned how it turned out because we made the recipe up as we went, but this chili was super delicious and will be a dinner staple this fall/winter.
Here is what we did!
Serves: 4-6 servings
Ingredients:
1 tbsp olive oil
1 medium yellow onion, diced
1 plablano pepper, diced
1 red and 1 orange bell pepper, diced
1 pound ground turkey, extra lean
1 pound ground beef, extra lean
1 can (15 oz) pumpkin puree
2 tablespoons tomato paste
2 cups beef bone broth
1/2 teaspoon cayenne
1 teaspoon chili powder
1 teaspoon smoked paprika
1 teaspoon cinnamon
1 teaspoon cumin
1 teaspoon ground pepper
1 teaspoon salt
2 cups water
Toppings:
Greek yogurt
Avocado or cheese
Hot sauce
Jalapeño sliced
Directions:
Line slow cooker with oven bag (for easy clean up)
Dice onions and peppers, add to slower cooker
Brown ground turkey and beef (browning adds flavor, but you can just throw into the slow cooker too), add to slow cooker
Add pumpkin puree, tomato paste, bone broth and seasonings into slow cooker
Mix it all together
Slow cook for 6 hours on high, string occasionally
At end, add 2 cups water to slow cooker (or however much you need to loosen it up and create a broth)
Serve in bowl and add toppings
Enjoy!
Will last in the refrigerator up to 3 days
