Healthy Sausage, Veggie and Sweet Potato Hash
This hash has been a staple in my recipe book for about three years now. It is super easy, jammed packed with veggies and you can mix and match with whatever you have on hand.
I stumbled upon this recipe when I was working out a holistic health and functional movements gym. I cannot express to you how much I loved this gym. The trainers were amazing, the class size was less than 5 so it felt very personalized, and they were always sharing weekly recipes to inspire health outside the gym. The only reason I don’t go to this gym anymore is simply, we moved!
Anyways, back to the hash. I snagged a version of this recipe from the gym, but have adjusted after making it so many times. I honestly don’t know who created this recipe or I would attribute the inspiration to them, but here is my version. Enjoy!
Healthy Sausage, Veggie and Sweet Potato Hash
Serves: 4
Ingredients:
1 tbsp avocado oil
1/2 pound sausage (I like hot)
4 slices bacon or turkey bacon
2 sweet potatoes, peeled and cubed or shaved
1 cup shaved brussel sprouts
1 small yellow onion, diced
1 zucchini, chopped
1 red pepper, chopped
1 clove garlic
Salt and pepper to season
1 tsp. thyme (or use any seasoning mix you like)
Directions:
Cook bacon, cool and chop up
In a cast iron skillet, add avocado oil and sausage, crumble and brown
Add in sweet potatoes and brussel sprouts, cook till soften
Add in bacon, onion, zucchini, red pepper and garlic, cook till soften
Add salt, pepper and thyme, cook till sweet potatoes are cooked through
Optional: service with an egg
