Mango Cucumber & Mint Salad

The other night I made a version of this salad with watermelon, feta and basil, and honestly, either version of this fresh, light and healthy salad is a crowd pleaser. Today’s version I decided to make with melon and mint and boy was it so yummy.

This salad is the perfect spring salad. It is light, refreshing, full of flavor and takes less than 10 minutes to pull together. The hardest part is the chopping! You can watch me make the salad here.

Here is what I did:

Mango Cucumber & Mint Salad

Ingredients:

  • 1 Mango, chopped

  • 1 English cucumber, chopped

  • 1/2 shallot, chopped

  • Mint, chopped

  • 2 tbsp EVOO

  • 1 tbsp Rice Wine Vinegar

  • 1-2 tbsp maple syrup

  • Pinch of salt

  • Optional: feta cheese and toasted walnuts

Directions:

  • Chop mango, cucumber, shallot and mint. Put everything in a bowl.

  • Mix up dressing and pour over salad.

  • Enjoy!
