The Most Delicious and Healthier for You Chocolate Chip Cookies

My desire to bake has really kicked in the past few weeks. Baking as always helped me calm my anxiety and stress during uncontrollable situations. It might be the precision baking requires and the need to follow a recipe, but I love how ‘put at ease’ my mind feels and bonus, the house smells delicious.

Don’t get me wrong, I love traditional baked goods and will devour a cupcake, croissant or macaron any day of the week, but when I am baking at home I love to try healthier for you options. At first it helped me not feel as ‘guilty’ for my indulgence, but as I have worked to create an intuitive eating mindset, it’s more about exploring ingredients, what I have in the house and what ingredients will make my stomach not hurt. For me, those are healthier alternatives like almond flour, coconut sugar, almond butter, pumpkin, oats and more.

Currently on rotation in our household are these delicious chocolate chip cookies. They are chewy and so chocolatey and nutty. The recipes calls for alternative ingredients that are healthier options vs your granulated sugar and AP flour. Trust me though, Ben has been requesting these on a regular basis which is such a compliment in itself (he is picky and likes his sugar) plus they are super easy to make.

Ingredients:

Directions:

  • Line a baking sheet with parchment paper and set the over to 350 degrees.

  • In a medium bowl, mix almond flour, tahini, maple syrup, collagen peptides, chocolate chips, nuts and coconut flakes together.

  • Chill for 30 minutes.

  • Mix in egg and baking soda. It will create more of a cookie dough consistency but will be sticky.

  • Scoop out 12 cookies onto the parchment paper.

  • Bake for 10 minutes or until you can smell them and let them cool.

  • Enjoy!
